Minus 8 is a family-owned vineyard in Niagara, Canada, where the hot summers and cold winters allow them to craft exceptional vinegar and verjus from their grapes. Their first and flagship vinegar, Minus 8, was named after the temperature at which the grapes were harvested. What sets them apart is their production process. They use grapes that are harvested in freezing conditions, allowing for the natural concentration of flavours, which not only creates exceptional vinegar but also reduces the need for additional resources like preservatives or artificial additives.
Minus 8 adheres to environmentally friendly practices by utilising the entirety of their grape harvest, ensuring minimal waste. This “nose-to-tail” approach to grape farming showcases their commitment to reducing environmental impact. Furthermore, their long-term aging process, sometimes spanning decades, eliminates the need for frequent reprocessing, thus conserving energy and resources.
