Yield: 10 portions Prep Time: 30 minutes Cook Time: 45 minutes

Ingredients:

 

Method:

  1. Sweat shallots and garlic until translucent
  2. Add peeled, chopped Jerusalem artichokes
  3. Deglaze with white wine
  4. Add stock and simmer until artichokes are tender
  5. Blend until smooth, add cream
  6. Sauté wild mushrooms separately
  7. Serve topped with mushrooms and fresh thyme
